In the professional's file, Schedule tab, there are several sub-tabs. The first two define when they work.

General schedule: their normal week

Set which days they work and in which time slots. Each day can have several slots, for example Monday 9:00–14:00 and 16:00–20:00.

If they work shifts that change each week, you can make a rotating schedule (up to 8 weeks) and set the date week 1 starts.

Tip: if you use a rotating schedule, check several weeks on the calendar to make sure the shifts fall where you expect.

Special schedules: the exceptions

Use these for a specific day when they work differently, or don't work, without touching their general schedule. For example, a Saturday when they do an extra shift.

Choose the date and whether they work. If they do, add the time slots. You can repeat it every 1, 2 or 3 weeks until a date.

With the schedule set, the calendar's professionals view shows when each one is available.
